The AF710-3 is a visual instrument approved by the American Oil Chemists Society (AOCS) for the colour grading of oils and fats in accordance with official AOCS procedure Cc 13a-43, Wesson method. Colour is determined by comparing the light transmitted through an oil column with the light transmitted through a series of red and yellow glasses calibrated according to the AOCS Tintometer® colour scale.

Using the glasses, a matching colour can be found for the light transmitted through the oil, and this colour is then expressed in red and yellow units.
